Good Homemade Vegetable & Beef Stew?

I love vegetable beef stew, and I want to try making some. Does anybody have any really good recipes? Also what is the best type of beef to use? I am not a fan of beef, but I love to eat it in vegetable stew as long as it's REALLY tender. Any suggestions on this also??? Thanks!! :)
